Roast Chicken

The Spoonsparrow recipe for roast chicken is always well received and guaranteed to succeed!

Ingredients

  • 1 whole chicken (grilled chicken)
  • Salt
  • 1 untreated lemon
  • sage leaf
  • 1 tsp paprika powder
  • a pinch pepper (ground)
  • a pinch curry
  • 1 tsp chili flakes (ground)
  • 1 tbsp honey
  • 1 tsp sharp mustard
  • 2 tbsp oil
  • lemon zest
  • sage leaf

Instructions

    Wash the chicken under running water, pat dry and salt inside. Roughly cube the lemon and fill the chicken with lemon cubes and sage leaves. Secure with toothpicks.

    Lightly oil the poultry rack, mix paprika, pepper, curry and chili with a pinch of salt and evenly coat the outside of the chicken, rubbing well. Place on the poultry rack (or spit).

    Preheat the oven to 200°C fan. Then place the chicken on the lowest rack or floor, bake for about 60 minutes (if it darkens too much, cover with a piece of foil). Near halfway through, whisk honey, mustard and oil smooth, brush all over the chicken, finish cooking.

    Remove finished chicken from the oven and serve garnished with lemon slices.
