Grilled Rib Rack

It doesn't always have to be the boring bratwurst! Try the grilled rib rack from Spoonsparrow – a tender high-end delight from the hot grill!
Ingredients
- 2 rib racks (rib cage, about 800 g, with bone, about 4 cm thick)
- 1 Red Onion
- 2 Garlic cloves
- 2 thyme sprigs
- 1 rosemary stalk
- 2 Bay leaves
- 6 tbsp Olive oil
- 2 tsp crushed steak pepper
- 2 tbsp sea salt

Wash the meat and pat dry.

Peel the onion and cut into rings. Peel the garlic and slice into wedges. Wash the herbs, shake off excess moisture, strip the leaves or needles and chop. Mix with garlic, onion rings, bay leaves, and oil; marinate the meat for about 30 minutes.

Preheat the grill and place the meat on it. Grill each side for about 5-8 minutes. Remove from the grill, let rest briefly, separate the meat from the bone, slice into portions, and serve. Offer grilled vegetables as desired.
