Turkey Cutlet with Beans

Ingredients
- 4 turkey cutlets (≈200 g)
- Salt
- black pepper (freshly ground)
- 2 tbsp flour
- 2 Eggs
- 8 tbsp almond flakes
- 2 shallots
- 3 tomatoes
- 400 g Green Beans
- 2 tbsp butter
- 1 Tbsp clarified butter
Instructions

Simmer tomatoes, peel, quarter, deseed and dice them.

Peel and dice shallots; sauté in 1 tbsp hot butter until translucent, add tomatoes, season with salt and pepper, and simmer for about 5 minutes.

Wash, trim ends of beans, blanch in heavily salted boiling water for about 8 minutes, then shock in ice water immediately.

Season turkey cutlets with salt and pepper, dredge first in flour, then in egg, and finally in almond flakes; press to adhere. Fry each side in hot butter fat for about 3 minutes per side.

Toss beans in remaining butter, heat through, and serve with tomatoes and turkey cutlets.
