Tajine with Chicken, Cinnamon, Apricots and Almonds

- 1 chicken (about 1.4 kg, ready to cook)
- Salt
- black pepper (freshly ground)
- 7 shallots
- 3 Garlic cloves
- 1 tbsp butter
- 2 tbsp olive oil
- 1 tsp freshly grated ginger
- 100 g Dried Apricots
- 1 tin saffron strands
- 250 ml poultry stock
- 1 cinnamon stick
- 80 g blanched almond kernels
- fresh coriander leaves (for garnish)

Wash the chicken, pat dry, cut into 8 portions, rub with salt and pepper, set aside. Peel the shallots and garlic; slice the shallots into halves. Heat butter and oil in the tajine, add shallots, squeeze in garlic, sauté until translucent. Add chicken pieces, brown for a few minutes. Stir in ginger, apricots, saffron and stock, mix well, season with salt and pepper. Cover and simmer gently for about 30 minutes, adding more stock if needed.

Add cinnamon stick and almonds, cover and continue cooking for another 15 minutes until tender. Taste and serve garnished with fresh coriander leaves. Pair with herb couscous.
