Straw with Red Wine

Ingredients

  • 2 ostrich steaks (≈220 g)
  • Salt
  • Pepper (freshly ground)
  • 1 Tbsp clarified butter
  • 1 tsp flour
  • 5 juniper berries
  • 125 ml poultry stock
  • 125 ml red wine

    Season the meat with salt and pepper. In hot clarified butter, sear both sides for about 4 minutes each (adjust to preference). Wrap in foil and let rest.

    Whisk flour into the pan fat, brown it lightly, then stir in wine and stock with a whisk. Add juniper berries, reduce by one‑third, and simmer until thickened. Season with salt and pepper. For serving, pour the pan juices over the sauce, reheat, slice the meat, and ladle onto the sauce. Serve with potato gratin.
