Turkey Chili with Corn

Delicious and healthy turkey chili with corn, bell pepper, and tomatoes. Lean protein, fiber-rich ingredients, and healthy fats provide a balanced meal.

Ingredients

  • 1 Red Onion
  • 2 Garlic cloves
  • 2 red chilies
  • 600 g turkey breast fillet
  • 2 tbsp olive oil
  • 2 tbsp Tomato paste
  • 400 ml Poultry broth
  • 1 green bell pepper
  • 4 medium tomatoes (about 100g each)
  • 200 g corn (canned)
  • 200 g white beans (canned)
  • Salt
  • black pepper (freshly ground)
  • Cayenne pepper

Instructions

    Peel the onion and garlic; set aside a few rings of onion for garnish, then finely dice the rest along with the garlic. Wash and finely chop the chilies.

    Wash, pat dry, and finely chop or grind the turkey breast. Brown it in hot oil until crumbly, add the diced onion, garlic, and chili, cook briefly, then stir in tomato paste. Deglaze with poultry broth and simmer gently for about 15 minutes.

    Wash, halve, clean, and dice the bell pepper. Boil tomatoes briefly, cool, peel, quarter, and remove seeds.

    Add corn and beans to the pot along with the diced bell pepper and tomato quarters. Simmer another 15–20 minutes; add more broth if needed. Season with salt, pepper, and cayenne pepper, garnish with onion rings, and serve.
