Chili con Carne with Crème Fraîche

Ingredients
- 2 onions
- 2 Garlic cloves
- 2 tbsp olive oil
- 500 g lean ground beef
- 3 tbsp tomato paste
- 1 l meat broth
- 1 tbsp oregano
- 1 tsp cumin
- 1 tbsp chili powder
- 1 tbsp sweet paprika
- 240 g white beans (canned; drained weight)
- 1 corn cob (or 1 can corn)
- 1 red bell pepper
- Salt
- freshly ground pepper
- 1 bunch parsley
- 150 g crème fraîche

Peel and finely chop the onions and garlic. Heat olive oil in a pot, brown the ground beef over high heat while stirring constantly. Add the onions and garlic to the meat and stir briefly.

Stir in the tomato paste and pour in the meat broth. Bring the chili con carne to a boil, season with oregano, cumin, chili powder, and sweet paprika to taste. Cover and simmer for 1 hour over medium heat.

Meanwhile, drain the beans in a sieve and rinse with cold water. Let them drain well. Cut the corn kernels off the cob. Wash the bell pepper, halve it, remove seeds, and cut into pieces. Add the beans, corn, and pepper to the chili con carne and cook for another 15–20 minutes.

Season the chili con carne with salt and pepper. Let it rest for an additional 5 minutes. Wash the parsley, shake dry, and finely chop.

Serve the chili con carne topped with crème fraîche and chopped parsley on plates.
