Turkey Breast with White Asparagus

- 750 g turkey breast fillet
- 4 tbsp plant oil
- 1 Garlic clove
- Salt
- Pepper (freshly ground)
- dark poultry stock
- 1.5 kg white asparagus
- 1 tsp sugar
- 40 g Butter

Preheat the oven to 200°C.

Wash and pat dry the turkey meat. Peel, chop the garlic, and mix with salt, pepper, and 2 tbsp oil. Rub this mixture onto the meat and sear it in an oven-safe pan on all sides. Then transfer to the hot oven and bake for about 25 minutes until cooked through, adding approximately 100 ml poultry stock during cooking.

Wash the asparagus, peel thoroughly, and trim the tough ends. Tie them into bundles with kitchen twine. In a large pot, bring plenty of salted water with sugar to a boil, add the asparagus, and cook for 15-18 minutes until tender.

Remove the asparagus from the water and drain well. Place the asparagus spears on plates and top with butter flakes. Slice the turkey breast, drizzle with some stock, then arrange together with the asparagus on plates and serve immediately.
