Grilled Bacon Potatoes

Ingredients

  • 2 tbsp olive oil
  • 2 tbsp chopped parsley
  • Salt
  • Pepper
  • 24 small waxy potatoes (cooked the day before)
  • 24 slices breakfast bacon
  • 3 sprigs thyme
  • 100 g yogurt
  • 100 g Sour cream
  • 1 tsp freshly grated horseradish
  • a splash lemon juice

Instructions

    Whisk the oil with parsley, salt and pepper. Toss the potatoes in this mixture and wrap each with a slice of bacon. Skewer them and place on a hot grill in an aluminum tray. Sprinkle thyme over and grill for about 10 minutes until the bacon is crisp.

    Meanwhile whisk yogurt with sour cream and horseradish. Season with lemon juice, salt and pepper and serve alongside the potatoes.
