Turkey Breast in Bread Dough

Ingredients
- 1 cube fresh yeast (42 g)
- 500 g whole wheat flour
- 2 tsp salt
- 1.2 kg turkey breast fillet
- Salt
- black pepper (ground)
- 0.5 tsp paprika powder
- Cayenne pepper
- 4 tbsp clarified butter
- 5 rosemary sprigs
- 5 thyme sprigs
- 10 sage leaves

Crush the yeast and stir it into a cup with 5 tbsp lukewarm water until smooth. Mix the flour with the salt, place in a bowl, press a well in the center, pour in the yeast mixture, dust with a little flour, and let rise for 15 minutes.

Add about 200-250 ml lukewarm water and knead by hand into a supple dough. Shape into a ball, cover with a cloth, and let rise for 1 hour until doubled in volume.

Preheat the oven to 180°C (350°F) with top and bottom heat.

After the rest period, knead the dough again vigorously.

Wash the meat, pat dry, and rub with salt, pepper, and cayenne pepper. In clarified butter, lightly brown the fillet on all sides in a roasting pan, remove it, and take the pan off the stove.

Wash and shake the herbs dry.

Place the meat back in the roasting pan, set the herbs aside. Roll out the dough on a lightly floured surface to match the pan size and lay it over the meat, pressing firmly around the edges of the pan.

Bake in the preheated oven for about 1 hour and 45 minutes.
