Poularden Saltimbocca with Paprika

- 4 chicken breast fillets (≈120 g each)
- Salt
- Pepper (freshly ground)
- 2 slices prosciutto
- 4 Sage leaves
- 2 tbsp olive oil
- 125 ml dry white wine
- 75 ml chicken stock
- basil (for garnish)

Wash, trim and slice the bell peppers into strips. Wash the celery, remove any fibers if necessary, and cut into thin slices. Peel the onion and cut into thin slivers. Wash the scallions, trim them and cut into thin rings.

Rinse the meat, pat dry, salt and pepper. Halve the prosciutto slices and rinse the sage leaves, pat dry. Cover each chicken fillet with a slice of prosciutto and a sage leaf, secure with a toothpick, and sear in a hot pan with oil until browned all around. Add wine and stock, then simmer over medium heat for about 8 minutes, turning occasionally.

Heat oil in another pan for the vegetables and sauté them for 2–3 minutes. Add a splash of water, cover, and cook on medium heat for about 5 minutes. Season with salt, pepper, and sugar to taste.

Plate the chicken atop the paprika vegetable mixture and garnish with basil before serving.
