Steamed Cod in Foil

Ingredients
- 1 lemon
- 4 cod fillets (pre‑cut, about 200 g each)
- Salt
- Pepper (freshly ground)
- 1 bunch spring onions
- 500 g tomatoes
- 80 ml dry white wine
- 2 small sprigs tarragon
Instructions

Preheat the oven to 200°C with fan and top heating.

Cut two large pieces of foil and brush the shiny side with melted butter.

Rinse the lemon, pat dry and slice into rounds.

Wash the cod fillets, pat them dry, then season with salt and pepper.

Trim the spring onions, wash them and cut into 3 cm pieces; split the thicker ones lengthwise.

Wash the tomatoes and slice them. Spread the sliced tomatoes and spring onions on the oiled foil. Place the fish and lemon slices on top, drizzle with wine (leave a margin of foil for sealing).

Rinse the tarragon. Pick off the leaves and chop partially. Sprinkle over the fish and vegetables.

Seal the foil into packets, place them on a rack and bake in the preheated oven for about 25 minutes.
