Tuna with Bean Vegetable Mix

Ingredients
- 200 g black beans
- 1 bay leaf
- Salt
- 2 Tomatoes
- 1 Red Onion
- 2 Spring Onions
- 1 Green Chili Pepper
- 100 g corn kernels (canned)
- 4 tbsp oil
- 2 tbsp Lime juice
- pepper (ground)
- 4 Irish tuna steaks (150 g each)
- 0.25 tsp ground cumin
- 2 tbsp chopped cilantro

Soak the beans in cold water overnight. Then cook them with fresh water and the bay leaf, bring to a slow boil and simmer covered on low heat for about 1½–2 hours. Finally season with salt.

Briefly blanch the tomatoes, cool, peel, quarter, deseed and dice. Peel and finely chop the onion. Trim, wash and slice the spring onions into thin rings. Deseed, wash and finely cube the chili pepper. Drain the corn kernels and let them dry, reserving the liquid.

Drain the beans. In a pot heat 1 tbsp oil, sauté the onions and chili cubes, add the beans, corn and a splash of corn liquid, bring to a boil. Add spring onions, tomatoes and lime juice, season with salt and pepper, remove from heat and keep warm.

Wash and pat dry the tuna steaks, season with cumin, salt and pepper. In a pan heat the remaining oil, sear each side of the tuna for 2 minutes. Remove from heat and let the fish rest for another 1–2 minutes. Fold cilantro into the bean mixture and serve with the tuna steaks on top.
