Tuna Tomato Tartlets

Ingredients

  • 250 g pastry dough (frozen)
  • butter for the molds
  • 185 g tuna (canned)
  • 1 tbsp black pitted olives
  • 1 tsp capers (jar)
  • 1 Red Onion
  • 1 tbsp fresh chopped basil
  • 4 tomatoes
  • flour for work surface
  • 4 tbsp freshly grated cheddar

Instructions

    Preheat the oven to 180°C with upper and lower heat.

    Let the pastry dough thaw while greasing four muffin tins.

    Drain the tuna. Chop olives, capers, and dice the onion. Mix tuna, olives, capers, and basil together. Wash tomatoes, pat dry, cut off tops, and remove seeds.

    Roll out the pastry on a floured surface and cut into 4 squares. Line the muffin cups with pastry squares and place one tomato in each. Fill tomatoes with tuna mixture and sprinkle cheddar on top. Bake in preheated oven for 20-25 minutes. Remove finished baskets from oven and serve with fresh salad if desired.
