Ingredients
- 4 tuna fillets
- 16 cocktail tomatoes
- 1 bay leaf
- thyme powder
- oil (for frying)
- lettuce of choice (e.g., lamb's lettuce and radicchio)
- 4 tbsp olive oil
- 3 tbsp white wine vinegar
- 1 tsp sugar
- Salt
- Pepper
- 8 skewer sticks
Instructions

Cut the tuna into bite‑size pieces and alternate them with washed cocktail tomatoes and bay leaves, threading 3 tuna pieces, 2 tomatoes, and a leaf onto each of the 8 skewers.

Season the skewers with salt, pepper, and thyme, then sear in a grill pan or on a grill over hot oil for about 3 minutes per side. Remove from heat and let finish cooking in residual heat.

Meanwhile wash, trim, and plate the lettuce. Drizzle with dressing made of olive oil, vinegar, sugar, salt, and pepper, and serve alongside the skewers.
