Tuna Sushi with Green Onion

Ingredients

  • 100 g sushi rice
  • 1 tbsp Rice vinegar
  • a pinch of salt
  • a pinch of sugar
  • 200 g fresh tuna
  • 4 roasted nori sheets
  • 1 tsp wasabi
  • 3 tbsp scallions

Instructions

    Wash the sushi rice thoroughly under running water in a sieve until the water runs clear.

    Add 150 ml water and a small piece of kombu to an unheated cooking container and steam at 100°C for 18 minutes in an electric steamer, stirring occasionally.

    Heat 1 tbsp rice vinegar and stir with salt and sugar.

  4. 4.

    Transfer the rice to a bowl, remove the seaweed. With a rice or cooking spoon, crosswise sweep through the rice while slowly pouring in the seasoning mixture. Fan the rice with a fan simultaneously so it cools quickly to room temperature and gains a nice shine.

    Wash the tuna, pat dry, and cut into very fine cubes.

    Cut each nori sheet across in half. Divide the rice into 8 portions and shape each portion with damp hands into an elongated mound. Place one half of a nori sheet on top of each mound, press lightly flat, add a small amount of wasabi paste, then top with tuna cubes and green onion, rolling into a pouch-shaped temaki sushi. Serve with soy sauce if desired.
