Ingredients

  • 125 g tuna fillet (whole piece)
  • 1 tbsp Sesame seeds
  • 1 tsp fine sea salt
  • white pepper
  • 1 tbsp soy oil
  • 1 red chili pepper (medium hot)
  • 2 tbsp coarsely chopped peanuts
  • 1 tbsp peanut oil
  • 0.5 small mango
  • 1 pinch salt
  • 1 tbsp mirin
  • 1 tbsp Rice vinegar
  • chopped scallion rolls for garnish

Instructions

    Rub the tuna fillet with sesame, salt and pepper. Heat the soy oil, quickly sear the tuna fillet over high heat all around, remove from pan and cover.

    Wash the chili pepper and slice into rings, removing seeds and stem. Toast the peanuts in peanut oil over high heat. Cut the mango into 1 cm cubes. Add the mango cubes to the peanuts and stir briefly; add the chili rings and stir again. Transfer the mixture to a bowl. Season with salt, mirin and rice vinegar.

    Slice the tuna fillet into 1 cm thick slices for serving. Place in small bowls and top each with some warm mango salad. Sprinkle with scallion rolls and serve.
