Ingredients

  • 400 g tuna fillet
  • 20 g Ginger
  • 2 cloves garlic
  • 4 tbsp olive oil
  • 0.5 tsp turmeric
  • Salt
  • white pepper
  • Cayenne pepper
  • 1 Mango
  • 0.5 cucumber
  • 0.5 Red Onion
  • 1 tomato
  • 1 yellow bell pepper
  • 1 coriander sprig
  • 1 parsley sprig
  • 1 Lime (juice)
  • 4 ready‑made wraps
  • 100 g Sour cream

Instructions

  1. 1.

Rinse the tuna, pat dry and cut into bite‑sized cubes. Peel and finely dice the ginger and garlic. Combine with olive oil, turmeric, salt, pepper and cayenne pepper; mix well and let marinate for about 15 minutes.

  2. 2.

Peel the mango, remove the flesh from the pit and cube it. Dice the cucumber. Finely chop the onion. Wash the tomato, trim the stem and dice it. Wash the bell pepper, deseed if desired and finely dice it. Rinse the coriander and parsley, shake dry and chop the leaves. Mix the mango, cucumber, onion, tomato, bell pepper and herbs together. Stir in lime juice and season with salt and pepper.

  3. 3.

Heat a skillet over high heat and sear the tuna for 2–3 minutes while turning, until just cooked through. Warm each wrap in another pan for about 1 minute per side. Spread the tuna and mango salsa on the wraps, drizzle with 2 tbsp sour cream, roll up and serve.
