Ingredients

  • 2 chicken breast fillets (about 140 g)
  • 1 Zucchini
  • 2 tbsp soy oil
  • 3 fresh coriander stems
  • Salt
  • Pepper (freshly ground)
  • 4 lettuce leaves (e.g., romaine)
  • a handful mung bean sprouts
  • 1 Carrot
  • 1 Mango
  • 100 g mayonnaise
  • 50 g plain yogurt
  • 1 tbsp orange juice
  • 4 tortilla flatbreads

Instructions

    Rinse the chicken, pat dry and cut into strips. Wash, trim and slice the zucchini into ~7 cm sticks. Sauté both in hot oil in a pan for 1-2 minutes until golden brown, add coriander, remove from heat, season with salt and pepper, and let cook for another 1-2 minutes. Wash, trim and shake lettuce dry, then tear into bite‑sized pieces. Rinse sprouts and drain well. Peel the carrot and grate finely. Peel the mango, cut the flesh away from the pit and dice.

    Whisk mayonnaise, yogurt and orange juice until smooth.

    Warm tortillas in a pan for 1 minute while turning them, then remove. Layer each tortilla with all prepared ingredients, drizzle sauce over, roll up, and serve on paper cups if desired.
