Trout with Almond Flakes

Ingredients
- 4 trout (pre-cooked, about 250 g each)
- 1 lemon juice
- Salt
- Pepper (freshly ground)
- 50 g flour
- 2 tbsp clarified butter
- 3 tbsp butter
- 2 tbsp freshly chopped parsley
- parsley
- lemon slices
- 1 tbsp almond flakes

Step 1: Rinse the trout and pat dry. Drizzle with lemon juice inside and out, then season with salt and pepper. Dredge in flour and cook in a hot pan of clarified butter, turning each side every 8-10 minutes until golden brown. Occasionally spoon clarified butter over the fish to keep it moist. The fish is done when the dorsal fin can be easily pulled away.

Step 2: Remove the trout from the pan and arrange on preheated plates. Drain excess clarified butter and let the remaining butter in the pan foam and lightly brown. Add the almonds and sprinkle them over the trout.

Serve garnished with parsley and lemon slices as desired.
