Ingredients
- 6 untreated mandarins
- 40 ml orange liqueur
- 100 g dark chocolate couverture
- 100 ml whipping cream
- 100 g yogurt
- 100 g butter cookies
- 50 g pistachio seeds
Instructions

Wash a mandarin hot, dry it and zest it. Peel all mandarins thoroughly and cut out the segments. Drizzle with liqueur and add the zest. Chop the chocolate and melt it over a double boiler with cream. Remove from heat, let cool, then fold in yogurt. Pulse cookies and pistachios in a food processor until fine crumbs form. Roughly half of the crumbs go into four glasses, top with a layer of chocolate cream and arrange mandarin segments (save a few for garnish). Fill the remaining crumbs on top and finish with more cream.
