Treated Harzer Roller with Radish Quark

Ingredients

  • 1 Red Onion
  • 500 g Harzer cheese (roller)
  • 1 tsp cumin seeds
  • 3 tbsp parsley
  • 3 tbsp white wine vinegar
  • 4 Tbsp sunflower oil
  • 8 radishes
  • 0.5 chives
  • 200 g Low-fat quark
  • 100 g Sour cream
  • 3 tbsp Plain yogurt
  • Salt
  • ground pepper

Instructions

    Peel the onion and slice it into thin, fine strips. Cut the cheese into 1 cm thick slices and mix with the onions, cumin, parsley, vinegar, and oil; let it rest briefly.

    Wash, peel, and dice the radishes. Wash the chives, shake dry, cut three halves into 3 cm long pieces, and slice the remainder into fine ribbons. Mix the quark with yogurt and sour cream, fold in the radish cubes and chive ribbons, and season with salt and pepper.

    Arrange the quark in bowls and garnish with remaining chives. Serve alongside the cheese.
