Ingredients

  • 4 light green bell peppers
  • 800 g beef tomato
  • 150 g white onions
  • 300 g honeydew melon
  • sugar
  • 1 tsp salt
  • Pepper
  • 2 tbsp white wine vinegar
  • 6 tbsp Olive oil
  • 150 g goat fresh cheese
  • parsley (for sprinkling)

Instructions

    Halve the bell peppers, clean and rinse them. Rinse the tomatoes and cut off the stem ends. Cut the peppers and tomatoes into 1 cm pieces. Peel, quarter, and slice the onions. Slice the melon into wedges, remove seeds, peel, and dice.

    Mix peppers, tomatoes, onions, and melon in a bowl. Whisk sugar, salt, pepper, vinegar, and oil to make a vinaigrette and toss with the salad. Let it rest for 10 minutes. Break the goat cheese into large chunks. Sprinkle the salad with goat cheese and parsley before serving.
