Ingredients

  • 9 stalks of green asparagus
  • Salt
  • 6 slices of Tramezzino bread
  • 100 g crème fraîche
  • 200 g grated cheese (e.g., Emmental)

Instructions

    Peel the lower third of each asparagus spear and blanch the spears in salted water for about 8 minutes until almost cooked. Shock, drain, and cut across into halves.

    Preheat the oven to 220 °C with both fan and conventional heat.

    Cut each Tramezzini slice crosswise into thirds, spread crème fraîche on them, sprinkle about two‑thirds of the cheese over each piece, and top with a piece of asparagus. Roll up the slices, press the edges firmly together, place seam side down on a baking sheet lined with parchment paper, and sprinkle the remaining cheese on top.

    Bake in the oven for about 10 minutes until crisp and golden brown. Remove from the oven and cool on a wire rack. Serve warm or at room temperature.
