Tortillas with Chicken, Bell Pepper and Sweet Chili Sauce

- 300 g chicken breast fillet
- Salt
- pepper (ground)
- 3 small bell peppers (yellow, red and green)
- 2 Spring Onions
- 2 tbsp olive oil
- lime juice
- 1 tbsp freshly chopped parsley
- 4 wheat tortillas
- 4 tsp sweet chili sauce

Rinse the chicken, pat dry, season with salt and pepper. Wash the bell peppers, halve them, remove seeds and cut into strips or bite-sized pieces. Clean the spring onions and slice into thin rings.

Cook the chicken breasts in a hot grill pan with oil for about 4 minutes on each side. Remove and wrap in foil. Cook the bell peppers in the pan, turning occasionally, for about 2 minutes. Add the spring onions briefly, season with salt and pepper, drizzle lime juice, and mix in parsley.

Slice the chicken breasts into strips.

Warm the tortillas in a dry pan or grill pan. Fill each with chicken and vegetables, drizzle sweet chili sauce, roll up, and serve.
