Ostrich steak with exotic mango sauce

- 4 ostrich steaks (160 g each)
- 2 ripe mangos
- 2 Spring Onions
- 600 ml unsweetened coconut milk
- 0.5 tbsp yellow curry paste (from Asian store)
- 2 tbsp Lime juice
- 1 red chili pepper
- 2 Garlic cloves
- Salt
- 2 tbsp finely chopped coriander
- Vegetable oil for frying

Peel the mangos and dice them into small cubes. Clean and slice the spring onions into thin rings. Briefly toast the curry paste without adding fat in a high-sided pan, then pour in the coconut milk. Stir to distribute the paste slightly in the liquid and bring to a boil. Reduce heat and let the sauce thicken to about two-thirds. Season with salt, then stir in the onion rings and mango cubes. Check seasoning again and set aside.

Remove seeds from the chili pepper and slice into thin rings. Peel and finely chop the garlic. Fry each ostrich steak in 2 tbsp oil for 2-3 minutes per side, then lightly season with salt. Mix garlic, chili, and coriander. Plate the steaks with the sauce, sprinkle with the coriander mixture, drizzle lime juice, and serve immediately.
