- 3 eggs
- 100 g Sour cream
- 1 sprig oregano
- 3 small tomatoes
- 1 tbsp Olive Oil
- 300 g Ground Beef
- 100 g blue cheese (e.g., Gorgonzola)
- Salt
- ground pepper

Whisk the eggs with sour cream, seasoning generously with salt and pepper. Wash the tomatoes and slice them into discs, removing stems. Rinse the oregano, shake dry, and finely chop a small sprig for garnish.

Heat olive oil in a pan. Brown the ground beef until crumbly, add oregano, and cook briefly. Pour the egg mixture over the meat. Sprinkle tomato slices and crumbled blue cheese on top. Cover and simmer on low heat for about 10 minutes, allowing the cheese to melt and the egg mixture to set.
