Tortilla with Prosciutto, Avocado and Watermelon

Ingredients

  • 1 ripe Avocado
  • 200 g feta
  • 200 g watermelon
  • 8 slices prosciutto
  • 2 tbsp freshly chopped mint
  • 1 tbsp lime juice
  • 2 tbsp olive oil
  • 4 tortilla wraps (about 20 cm diameter)

Instructions

    Halve the avocado, remove the pit, gently press the flesh out of the skin and dice into small cubes. Dice the feta and watermelon flesh similarly. Slice the prosciutto into thin strips. Mix all with mint, lime juice and olive oil.

    Warm the wraps slightly, roll them into pockets and fill with the salad mixture. Serve folded in napkins.
