Tortilla Sandwiches

- 800 g potatoes
- 2 tbsp olive oil
- 3 spring onions
- 2 Garlic cloves
- 8 eggs
- Salt
- Cayenne pepper

Preheat the oven to 180°C (350°F) with top and bottom heat. Peel, wash, and slice or shave the potatoes into thin rounds. In a pan heat the oil and fry the potato slices, turning occasionally, for about 10 minutes until golden brown. Meanwhile, wash and trim the spring onions, cutting them into narrow rings. Peel the garlic, finely chop it, and add it with the spring onions to the potatoes. Sauté briefly.

Beat the eggs and season with salt and cayenne pepper. Pour the egg mixture over the potatoes, rotating and lightly tilting the pan to distribute evenly and let set. Transfer the pan to the preheated oven and bake for 10-15 minutes until finished. Cut the finished tortilla into pieces and serve each piece topped with various herb sprigs or spice leaves as desired.
