Ingredients
- 2 Spring Onions
- 3 sage leaves
- 400 g topinambur
- 2 tbsp Ghee
- 150 g amaranth
- 1 tsp Indian curry powder
- 1 tbsp Tomato Paste
- 400 ml Vegetable broth
- Salt
- Garam masala
- 2 tbsp chives

Wash, trim, and slice the spring onions into thin diagonal rings. Rinse the sage leaves and pat dry. Wash, peel, and cut the topinambur roots into bite‑size pieces.

Heat the ghee in a pot and briefly sauté the spring onions with the sage. Rinse the amaranth in a sieve, drain well, and add it to the pot. Stir in the curry powder and tomato paste and cook for a moment. Then add the topinambur and pour in the broth. Cover and simmer for about 20 minutes.

Season with salt and Garam Masala at the end. Sprinkle with chives before serving.
