Rice Zucchini Rolls

Ingredients

  • 150 g wild rice
  • Salt
  • 150 g Feta
  • 60 g cashew nuts
  • 2 tbsp olive oil
  • 1 splash Lemon juice
  • pepper (ground)
  • 2 baby zucchinis

Instructions

    Bring about 400 ml salted water to a boil in a pot. Rinse the rice in a sieve, add it to the water and cook for 5 minutes. Then cover and simmer gently for about 40 minutes until the rice has absorbed all the liquid. Transfer to a bowl and let cool. Dice the feta and chop the cashew nuts. Mix both with the olive oil into the rice and season with lemon juice, salt and pepper.

    Wash and trim the zucchinis, then slice lengthwise into thin strips or shave them. Stack two nice slices on top of each other, shape into a ring and secure with toothpicks. Place on a plate, fill with the rice mixture and serve.
