Ingredients

  • 600 g topinambur
  • plant oil (for frying)
  • coarse Sea salt

Instructions

    Peel the topinambur and slice it into thin rounds using an electric mandoline or a hand plane.

    Heat plenty of plant oil in a deep fryer (170 °C) or a wide pot. The oil is hot enough when small bubbles rise on a wooden spoon placed inside.

  3. 3.

    Fry the topinambur slices in batches, letting them float, for 3–4 minutes until golden brown and then drain on kitchen paper. Season all chips with coarse sea salt.
