Tomatoes with Mozzarella, Capers and Basil

Ingredients

  • 250 g fresh buffalo mozzarella (or cow milk mozzarella as substitute)
  • 8 ripe heirloom tomatoes
  • 2 tbsp capers (pickled in vinegar)
  • 3 dried tomatoes (pickled in oil)
  • 1 handful fresh basil leaves
  • grissini
  • Salt
  • freshly ground pepper
  • Extra virgin olive oil, to taste

Instructions

    Wash and dry the tomatoes, then slice them crosswise. Drain the mozzarella and slice it. Arrange tomato slices on plates, season with salt and pepper, and place mozzarella slices on top. Sprinkle with pepper.

    Drain the dried tomatoes slightly and finely chop them. Rinse capers under running cold water and drain well. Distribute capers and chopped dried tomatoes over the mozzarella and scatter basil leaves on top. Drizzle 1-2 tbsp olive oil as desired and serve immediately with grissini.
