Tomatoes in Vinegar Marinade

Ingredients

  • 1 kg small ripe tomatoes
  • 4 shallots
  • 500 ml wine vinegar
  • 125 ml water
  • 10 g salt
  • 10 g sugar
  • 1 spice clove
  • 10 g peppercorns
  • 20 g mustard seeds
  • 0.5 packet pickling aid

Instructions

    Wash and dry the tomatoes. Prick each tomato a few times with a small wooden skewer. Place them in clean canning jars. Peel the shallots and slice finely. Combine the vinegar, water, salt, sugar, spice clove, peppercorns, and mustard seeds; bring to a boil.

    Remove from heat and stir in the pickling aid. Pour the hot liquid over the tomatoes. Seal the jars tightly, let cool, and store in a cool place.
