Tomato-Zucchini Soup

Ingredients

  • 8 slices of stale bread
  • 600 g zucchini
  • 3 tbsp Rapeseed oil
  • 800 ml tomato juice
  • 400 ml water
  • 2 tbsp crème fraîche
  • 4 tbsp chopped basil
  • Salt
  • ground pepper
  • Basil

Instructions

    Wash and dice the zucchini. Cut the bread into small cubes as well. Roast the bread cubes in hot oil until crisp. Add the zucchini and sauté for about 2 minutes.

    Add the tomato juice and water, then simmer for approximately 10 minutes. Stir in the crème fraîche, season with salt and pepper, add basil, and serve on plates sprinkled with additional basil.
