Tomato Soy Smoothie

Refreshing and cool, this smoothie is wonderfully creamy. Made with tomato and soybeans, it delivers plenty of protein and bioactive plant compounds.

Ingredients

  • 160 g tomatoes (2 medium)
  • 4 Basil stems
  • 100 ml soy drink (soy milk, 1.2% fat)
  • Salt
  • Pepper
  • Ice cubes

Instructions

    Wash the tomatoes, cut off the stem ends and quarter them.

  2. 2.

    Wash the basil, shake dry, pluck leaves and set aside a few for garnish; slice the remaining leaves into strips.

    Blend the basil strips with tomatoes, soy drink, salt, pepper, and ice cubes in a stand mixer until smooth and frothy. Pour into a glass and garnish with the reserved basil leaves.
