Ingredients

  • 300 g fusilli
  • Salz
  • 1 Schalotte
  • 1 Knoblauchzehe
  • 200 g knollensellerie
  • 800 g Tomaten
  • 100 g getrocknete Tomaten
  • 2 EL Olivenöl
  • 1 Lorbeerblatt
  • 1 TL Wacholderbeere
  • 1 Schuss Rotwein
  • 800 ml Gemüsebrühe
  • Salz
  • Zucker
  • Cayennepfeffer
  • frisch gehackter Dill (zum Garnieren)

Instructions

    Cook the fusilli in salted water until al dente. Rinse and drain.

    Peel and finely chop the shallot and garlic. Peel and dice the celery. Heat the tomatoes, rinse, peel, quarter, seed, and cube them.

    Coarsely chop the tomatoes as desired and sauté with shallot, garlic, and celery in hot oil for 2-3 minutes. Add bay leaf and juniper berries, deglaze with red wine. Pour in broth and add fresh tomatoes. Simmer gently for about 20 minutes, stirring occasionally; add more broth if needed.

    Add the pasta to the soup, season with salt, a pinch of sugar, and cayenne pepper, then serve in bowls. Sprinkle with fresh dill before serving.
