Ingredients

  • 30 g anchovy fillets (salted)
  • 2 friselle (Italian specialty store)
  • 400 g fusilli
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp olive oil
  • 3 Garlic cloves
  • 4 sprigs Parsley

Instructions

    Remove the anchovy fillets from salt and rinse under water. Pat dry with paper towels and finely chop. Break the friselle into small pieces. Cook the pasta in plenty of salted water until al dente.

    Heat 2 tablespoons of oil in a large pan. Peel and press the garlic cloves into the oil. Add the anchovies and simmer over low heat, stirring occasionally to release their flavor.

    In another pan, heat oil and fry the friselle until crisp. Set aside to cool. Wash the parsley, remove leaves, and finely chop. Reserve about 100 ml of pasta cooking water and pour it over the anchovies. Drain the pasta and toss with the sardine sauce. Season with salt and pepper. Plate and sprinkle with toasted breadcrumbs and parsley before serving.
