Tomato Soup with Noodles

Ingredients

  • 800 g cherry tomatoes
  • 2 cm fresh ginger
  • 1 clove garlic
  • 1 tbsp soy oil
  • 200 ml rice wine
  • 2 tbsp Soy sauce
  • 1 tsp palm sugar
  • 0.5 lime (juice)
  • 300 g soba noodles
  • 4 spring onions (only the white and light green parts)

Instructions

    Boil the tomatoes, shock them in cold water, peel and roughly mash about half of them. Peel and finely chop the ginger and garlic. Sauté together briefly in hot oil in a pot. Deglaze with rice wine, add some soy sauce, sugar, lime juice, and all the tomatoes; simmer gently for about 10 minutes. Add a little water if needed.

    Cook the noodles according to package instructions.

    Wash, trim, and slice the spring onions into slightly angled rings.

    Taste the soup. Drain the noodles and arrange on plates. Pour the soup over them and sprinkle with spring onions before serving.
