Herb Cream Soup

Ingredients
- 2 tbsp olive oil (extra virgin)
- 100 g onions (finely chopped)
- 2 tbsp wheat flour
- 60 ml dry white wine
- 800 ml clear broth
- 125 g light cream
- 1 tbsp parsley (finely chopped)
- 1 tbsp chives (cut into rings)
- 1 tbsp lovage (finely chopped)
- Salt
- Pepper (freshly ground)
- nutmeg
- 2 tbsp basil (torn finely)
Instructions

Sauté onions in oil until translucent, dust with flour, deglaze with white wine, add broth and simmer for about 7 minutes; then stir in light cream and blend everything with an immersion blender.

Add parsley, chives, and lovage to the soup, season with salt, pepper, and nutmeg. Stir in the torn basil leaves.

Serve the soup in preheated bowls or soup plates, garnished with herbs as desired.
