Cauliflower Salmon Soup

Ingredients

  • 1 cauliflower (ca. 800 g)
  • 1 tbsp butter
  • 100 ml dry white wine
  • 600 ml Vegetable Broth
  • 1 untreated orange
  • 400 g salmon fillet (ready to cook)
  • Salt
  • white pepper
  • 2 egg yolks
  • 100 g light cream

Instructions

    Wash, trim and cut the cauliflower into florets. Sauté in hot butter in a pot. Deglaze with wine and broth and simmer gently for about 5 minutes. Wash the orange hot, zest it and squeeze out the juice. Rinse the salmon and cube it. Add the orange juice and zest to the soup, season with salt and pepper, and do not let it boil again. Let it cook on low heat for 3-4 minutes. Whisk the egg yolks with the light cream until smooth. Stir in 4-5 tbsp of soup and fold the cream into the soup.
