A fresh tomato salsa perfect for a quick after-work snack – light, healthy and bursting with flavor.

Ingredients

  • 10 ripe tomatoes
  • 2 shallots
  • 1 Garlic clove
  • 0.5 bunch Basil
  • 2 tbsp white wine vinegar
  • 3 tbsp olive oil
  • Salt
  • ground pepper

Instructions

    Blanch the tomatoes, cool them in ice water, peel, quarter, seed and dice into small cubes. Peel and finely chop the shallots and garlic. Rinse the basil, shake dry and split the leaves lengthwise.

    Combine the tomatoes, shallots, garlic, vinegar and oil; season with salt and pepper. Serve in small bowls with toasted white bread.
