Ingredients

  • 2 kg small boiling potatoes
  • 500 g coarse sea salt
  • 4 tomatoes
  • 1 Red Onion
  • 2 tbsp olive oil
  • 1 tsp lemon juice
  • Pepper

Instructions

    Wash the potatoes, place them in a pot and cover with water. Stir in the salt and simmer for about 25 minutes.

    For the salsa, wash the tomatoes, quarter them, remove seeds and dice finely. Peel and finely dice the onion. Rinse parsley, dry, strip leaves and chop. Combine all ingredients with olive oil, season with lemon juice and pepper.

    Drain the potatoes and let them steam on the stove until a salt crust forms around them. Serve with the salsa.
