Ingredients
- 4 hard-boiled eggs
- 4 tomatoes
- 1 Spring onion
- Salt
- pepper (from grinder)
- 50 g mayonnaise
- 100 g Sour cream
- 2 tbsp heavy cream
- Salt

- 1 tbsp Lemon Juice
- Tabasco
- 2 tbsp small capers
- small basil
Instructions

Peel the eggs and cut them into eighths.

Wash tomatoes, quarter them, remove seeds, and dice finely.

Wash spring onion, trim it, and slice into thin rings.

Whisk sour cream with mayonnaise, heavy cream, and lemon juice until smooth; season with a few drops of Tabasco, salt, and pepper, then taste.

Arrange eggs, tomatoes, and spring onions on a plate, pour the sauce over them, sprinkle capers and basil leaves, and finish with coarsely ground pepper.
