Tomato Salad with Fennel

A fresh tomato salad with fennel and orange, a perfect starter or side from Spoonsparrow!

Ingredients

  • 1 bulb fennel
  • red onions
  • 600 g tomatoes
  • 1 Orange (juice)
  • 2 tsp Liquid Honey
  • salt, pepper
  • 4 tbsp olive oil
  • 30 g pitted Kalamata olives

Instructions

    Clean the fennel, set aside the green for garnish, rinse and finely grate. Peel the onion and grate it as well. Rinse the tomatoes and cut them into pieces. Peel the orange like an apple, filet it, and catch the juice.

    Whisk the orange juice with honey, salt, pepper, and olive oil. Toss the prepared salad ingredients with the olives. Drizzle the vinaigrette over the salad. Sprinkle chopped fennel greens on top.
