Tomato Quiche

Ingredients

  • 150 g flour
  • 75 g butter
  • 1 egg
  • 0.5 tsp Salt
  • 4 tomatoes
  • 1 handful basil
  • 3 eggs
  • 200 ml whipping cream
  • 400 g ricotta
  • 75 g parmesan (freshly grated)
  • Sea salt
  • pepper (ground)
  • olive oil

Instructions

    Knead the flour, cold butter pieces, egg and salt quickly into a shortcrust dough, shape it into a ball and wrap in cling film to chill in the refrigerator for about 30 minutes.

    Wash the tomatoes, cut off the stem ends and slice them. Pick the basil leaves and cut into strips. Whisk the eggs with cream, ricotta and half of the parmesan, season with salt and pepper.

    Preheat the oven to 180 °C (convection).

    Roll out the dough and line an oiled quiche tin with it; let the edge hang slightly over the rim. Spread half the tomato slices on top, sprinkle with half the basil and spread the ricotta mixture over them. Arrange the remaining tomato slices, top with basil and the rest of the cheese, season with a touch of pepper and drizzle with olive oil.

    Bake in the preheated oven for about 40 minutes until golden brown.
