Quark Dumplings

Ingredients
- 250 g low‑fat quark
- 1 egg
- 2 tbsp flour
- 2 tbsp semolina
- 2 heaping tbsp breadcrumbs
- Salt
- 70 g butter
- 25 g sugar
- 40 g breadcrumbs
- 1 pinch cinnamon
- 20 g ground almonds
- 2 Apples
- 200 g plums
- 60 g sugar
- 30 g Butter
- 100 ml apple juice
- 20 ml plum water
- 1 pinch cinnamon
Instructions

Combine all dough ingredients with a pinch of salt and let rest for 30 minutes. Shape dumplings with wet hands and cook in gently simmering water for about 12–15 minutes.

Peel, core, and slice the apples. Wash, drain, core, and cut the plums into wedges. In a pan caramelize sugar with butter, add apples, plums, and cinnamon, then deglaze with apple juice and plum water.

Brown butter, add remaining ingredients. Toss the quark dumplings in the browned butter‑breadcrumb mixture and dust with ground almonds.

Spread the apple‑plum compote on a preheated plate and place the quark dumplings on top. Optionally garnish the rim with powdered sugar.
