Quark Soufflé

Ingredients
- 2 egg yolks
- 40 g powdered sugar
- 80 g quark
- 3 egg whites
- 30 g sugar
- 1 untreated lime (zest)
- butter (for the molds)
- sugar (for the molds)
- powdered sugar (to dust)
- 150 ml red wine
- 50 g sugar
- 500 g mixed berries
- 1 packet vanilla sugar
- 2 Cinnamon sticks
- chopped nuts (for garnish)
Instructions

Bring wine, sugar, vanilla sugar and 450 ml water to a boil, remove from heat and pour into a bowl.

Wash, clean and dry the berries.

Place the fruit in the syrup and let marinate briefly.

For the soufflés beat the egg yolks with powdered sugar until white and frothy, then slowly fold in the pressed quark. Beat the egg whites very stiffly; while continuing to beat, gradually add sugar, beating until the mixture is white, glossy and firm. Fold in the lime zest and quark mixture. Grease 8 cm diameter molds with butter, dust with sugar, and fill with batter. Bake in a preheated oven at 190°C for about 25 minutes in a water bath. Remove the molds, plate onto a dish and dust with powdered sugar before serving.
