The Tomato‑Peach Salad by Spoonsparrow is the perfect blend of fruity and spicy ingredients – ideal for summer!

Ingredients

  • 6 tomatoes
  • 2 small onions
  • 1 handful of nasturtium leaves (40 g)
  • 1 handful of baby Swiss chard (40 g)
  • 1 stalk lemon balm
  • 2 stems basil
  • 4 peaches
  • 4 tbsp apple cider vinegar
  • 4 tbsp rapeseed oil
  • a pinch of whole‑grain sugar
  • Salt

Instructions

    Clean, wash and cut the tomatoes into wedges. Peel and slice the onions into rings. Wash and dry the nasturtium and Swiss chard, then pat them dry. Rinse the herbs, shake off excess water, pluck the leaves and tear them into smaller pieces as desired. Wash, pit, and cut the peaches into bite‑sized chunks. Gently combine all prepared salad ingredients and arrange on plates.

    Whisk vinegar with oil, 1–2 tbsp water, whole‑grain sugar, and salt to make the dressing. Drizzle over the tomato‑peach salad and serve immediately.
