Ingredients

  • 250 g ready-made puff pastry
  • 1 egg yolk
  • 400 g spinach
  • Salt
  • 1 Shallot
  • 1 Garlic clove
  • 1 tbsp butter
  • Pepper (freshly ground)
  • nutmeg
  • 1 handful marjoram (5 g)
  • 100 g alpine cheese

Instructions

  1. 1.

Roll out the puff pastry on a lightly floured surface and cut four circles (16-18 cm). Prick each circle several times with a fork and brush with egg yolk mixed with 1-2 tbsp water. Preheat the oven to 200°C (180°C fan; gas: level 2–3).

  2. 2.

Wash, trim and briefly blanch the spinach in a pot of boiling salted water. Drain well and roughly chop. Peel and finely mince the shallot and garlic. Sauté both in hot butter over medium heat until the shallot becomes translucent. Add the spinach, simmer for 5-7 minutes, then remove from heat.

  3. 3.

Season with a little salt, pepper and nutmeg, then spread onto the pastry bases leaving a border of about 1-2 cm. Grate the alpine cheese. Wash the marjoram, shake dry, pluck the leaves and finely chop.

  4. 4.

Place the pizzas on a baking sheet lined with parchment paper. Sprinkle the spinach pizza with marjoram and cheese, then bake in the middle rack for about 15–20 minutes until golden brown.
